It’s been a minute, huh?
Between business trips ✈️, hosting the most amazing special needs picnics ❤️, planting grass like I’m auditioning for Better Homes & Gardens 🌱, and living in a full-blown construction zone 🛠️ (mental health = fragile 🫠), I haven’t posted a recipe in a hot sec. Turns out, I’m not a “live laugh love through renovations” kind of girl—check on me.
But on this frosty May night ❄️ (rude), I needed comfort food that says “marry me already”. So I whipped up Marry Me Meatloaf—stuffed with That Girl Brie’s Portabella & Chive Cheese 🧀 because basic meatloaf just isn’t putting a ring on it ladies.
Mike’s been around 28 years and if this is what I served on Day 1, he would’ve proposed right then and there 💍.
Served with:
➡️Buttery chunky mashed baby reds 🥔
➡️Our favorite veggie mix 🥕🌽
➡️A side of disbelief that it’s still winter in May 🙃
Mom-approved. Stomach-hugging. Only 7 ingredients (because water and seasoning don’t count—rules are rules):
2 lbs ground chuck 🐄
1 medium onion, finely diced 🧅
1 box Stove Top stuffing
½ cup hot water 💧
½ stick melted butter 🧈
2 eggs 🥚
Portabella & Chive Cheese from That Girl Brie (be generous!)
Seasonings:
Worcestershire (aka wash-ya-sister sauce), onion powder, garlic powder, freshly cracked black pepper, salt — measure with your heart ❤️
Directions:
Mix your stuffing mix, hot water, and melted butter with a fork
Add in your meat, onion, eggs, and seasonings—get those hands in there
Press half the mixture into the bottom of a casserole dish
Hollow out a little trench and fill it with as much cheese as your loving heart desires 🧀
Top it off with the rest of your meat and seal that love in!
Optional (but emotionally required): slather with ketchup + brown sugar glaze ❤️‍🔥 (it’s what my mama did)
Bake at 375°F for 45–55 mins until your house smells like someone should propose to you
Serve hot and enjoy the compliments
